Mike is a passionate foodie and loves having the best produce available right at his fingertips. Working at the Central Market gives him the perfect excuse to shop around at his favourite market stalls and get creative in the kitchen.
With the cooler weather encroaching we sat down with Mike and asked him what he’ll be cooking up and what recommendations he has for his customers.
“It’s time to get back into those tasty secondary slow-cook cuts. Coorong Angus beef cheeks, ox tail, whole chucks and brisket are four of my favourite cuts of beef – when cooked just right the meat falls apart and melts in the mouth, with a flavour that’s second to none. Plus, they have the added bonus of being cheaper than ‘premium’ cuts – it’s a win:win on taste and price!”
Mike also loves to get low and slow with some Free-Range Berkshire Pork Boston Butt, he recommends smoking it if you can. He can also be found happily cooking up a storm with a whole Lamb Shoulder on the bone or slow cooking with some diced lamb.
“I love making my own stock at home, it’s a fun and cheap option which also warms the house on those cold winters days! If you don’t have the time to do it yourself drop into the stall and we can hook you up with some great stocks produced in our own Feast! kitchen in the Adelaide Hills cooked by our qualified in-house chef.”
Mike is a wealth of knowledge and knows how to make the most out of the products he sells. He’s become a favourite character around the Adelaide Central Markets. He and his staff are always ready to stop for a chat with customers and love helping people to achieve “ultimate winter cooking bliss”.
