Christmas Inspired

With so much of the time leading up to Christmas spent on cooking the feature pieces such as your Turkey and Ham, it is easy to forget the sides that go with your meal. Below are some quick and easy recipe ideas for delicious sides for your Christmas feast.


Potato, Tomato and Almond Salad (Pairs well with Beef, Ham and Lamb)

Ingredients (adjust accordingly to suit your amount of guests)
- Potatoes
- Tomatoes
- Almonds
- Red Onion
- Herbs (Rocket, Thyme, Mint and Basil)
- Extra Virgin Olive Oil
- White Wine Vinegar

Instructions
Peel a large amount of potatoes and then add them to boiling water to soften them.

Once they are boiled, put them into a large bowl and then lightly crush the potatoes with a fork.

Chop your tomatoes into small wedges and then add them to the potatoes.

Finely chop your red onion, rocket, mint, thyme and basil leaves and then add them to the other ingredients.

Add your roasted almonds and then mix all the ingredients together.

Drizzle with olive oil and white wine vinegar before serving.

 

Carrot, Ricotta and Lemon Salad (Pairs well with Chicken, Ham and Turkey)

Ingredients (adjust accordingly to suit your amount of guests)
- Carrots
- Ricotta
- Lemon Zest and Lemon Juice
- Chives
 
Instructions
Peel your carrots and then chop them into reasonably sized sticks before adding them to well salted boiling water. Cook them until they are tender.

Remove the carrots from the water before placing them into an appropriately sized salad bowl. Break the ricotta into small pieces before adding it to the carrots. Remove the zest from your lemons and add this as well as the lemon juice to the salad.

Drizzle with olive oil before adding chopped chives. Combine all the ingredients before serving.
