Pure Suffolk Lamb™ a super premium lamb brand grown in Australia.

Pure Suffolk has been recognised through various award ceremonies, including most recently becoming a medallist at the 2011 Delicious Produce Awards in the 'From the Paddock' category. Pure Suffolk Lamb was also a finalist in the 2009 Vogue Entertaining + Travel Produce Awards.

It is also used at Quay Restaurant in Sydney which was awarded Restaurant of the Year by Gourmet Traveller, Sydney Morning Herald and The Hotel and Catering Association in 2009. It also won the Gourmet Traveller restaurant of the year for the 2010 guide and is one of 2 Australian restaurants listed on the world's top 50.

Grown from the distinctive black faced suffolk breed of sheep it has an amazing depth of flavour which combines so well with the modest amount of tiny marbling flecks present in the meat.

Pure Suffolk Lamb is derived from a 100% meat sheep with no wool breeds such as merino or corriedale in it's breeding. This results in a far higher meat quality in terms of meat grain, texture, marbling and overall flavour

Another unique attribute of the pure bred black faced suffolk is it's size. While a standard lamb in Australia weighs approximately 44kg at 7months old the Purebred Suffolk weighs closer to 66kg at the same age. This increased size gives rise to lamb loin chops that could only be described as Lamb T-Bones due to their size being approximately 50% bigger than a conventional lamb chop.

Pure Suffolk Lamb is in limited supply with the Gunner family in the process of reversing a steady decline in the breeds numbers since 1984. The Suffolk breed had dropped in numbers by 75% in the past 20 years to the point where it was rapidly approaching the point at which it would of been classed as "At Risk" by the Rare Breeds Trust of Australia. Fortunately the development of Pure Suffolk Lamb has arrested that slide and provides a tangible example of how to save a breed from becoming "rare".
