The weight of the whole carcass will vary in weight between approximately 20-26 kg. The following price is hanging weight which includes bone, trim and shrinkage. The approximate loss will vary between 10-35% off the total hanging carcass weight (depending on the cuts you have selected - e.g. selecting an EZ Carve Leg rather than a traditional bone in leg roast will result in more 'trim' which results in reduced weight when you receive the product).
