Game Bird Cookery with Saskia Beer

Join Saskia Beer, from Barossa Farm produce, Chef, Farmer and supplier of Game Birds, Charcuiterie and so much more and learn how to cook a variety of Game Bird products.

Saskia will discuss the supply and availability of Game Birds and demonstrate some delicious and simple classic cookery techniques to get the most out of the short seasonal supply of these wonderful ingredients

This demonstrative class which will cover Goose, Pheasant and Squab will be followed by a shared meal at the completion of the class.

Attendees will learn how to cook the perfect goose, easy stuffing ideas, trussing and roasting. Pheasant will be marinated with classic ingredients and attendees will participate in boning out a Squab before they are cooked and served with seasonal salads.

During the class, attendees will get to participate in boning a Squab before being cooked and enjoyed during the class with the other cooked products.
